Baked Mixed Vegetables

I love eating my veg. I am however, not the biggest fan of washing up. This recipe solves that little problem, it is really tasty and really easy, which in my opinion is essential on Christmas Day! There are never enough hobs for this time of year and this recipe requires none! You read that right. Stick it in the oven on one oven tray, feel free to add in different veg if you want, miss some out if you like. It is flexible and versatile and just what the family needs, when you've had one limp carrot too many and need to mix it up a bit.

You will need:

5 Carrots

5 Parsnips

175g Baby Corn

1 Red Onion

4 tbsp Vinaigrette dressing

Thyme

Rosemary

Bay Leaf (remember to remove before serving)

Salt and pepper

Oven tray and kitchen foil

Like I said, you could add other veg to this and do all the veg in one job lot, even potatoes, and have absolutely no pans. We like to mix in some other recipes and flavours on Christmas Day, with Cauliflower Cheese and Sprouts and Bacon, they can be found on the 'Recipe' tab. We cook roast potatoes and have found adding potatoes to the mix on top of that, too much for our family, so I have left those out. If you choose to add them in though be aware it is likely to take longer to cook. This recipe will serve 8.

Method:

Preheat oven to 200ºC.

Peel and cut the onion into 8 through the root so each section stays together.

Peel and Slice the carrots and parsnip into thin sticks.

Lay the foil into your oven tray, you should leave an overhang the length of the oven tray again, ready to fold over.

Coat the silver foil with a little of the vinaigrette dressing.

Place in all the veg into the tray, and sprinkle on the salt, pepper, herbs and the remainder of the dressing.

Turn the veg to coat, being careful not to tear the foil.

Now fold over the foil flap and being careful to leave a gap between the veg and foil, fold each edge over a few times to seal the parcel. Then the steam can cook but not escape.

Cook for 40 minutes.

Serve and enjoy.
