Banana Bread


One banana, two banana, three banana, four, four banana's make a bunch and so do many more...tra la la...la la la la...tra la la...la la la...Luckily for us they don't just make bunches, they also make pretty great cake too!

This recipe is great if you shop on a budget, have some ripe banana's to use up because the kids won't touch them,"They have brown spots on the skin! Yuk!" Or if you just fancy a change! It is easy to make, quick, cheap, tasty...I could go on, but I know you'd rather be testing it for yourself right?!


You will need:

A loaf tin

A mixer

4 Bananas your children will not eat! (until now)

280g Margarine

280g Caster sugar

280g Self raising flour

4 eggs

1 tsp baking powder


Method

Preheat oven to 180ºC.

Grease a baking tin and line the base with greaseproof/baking paper.

Cream together the sugar and margarine.

Add in the flour, baking powder and eggs.

Mix again until smooth.

Roughly chop up the bananas.

Add in the bananas and mix thoroughly. The mixer should mash those lovely ripe bananas into tiny chunks.

Tip the mix into the tin and spread evenly.

Bung it in the oven. Now, I have noticed that the cooking time on this can vary. It takes a little longer than a sponge usually would, which is probably due to the increased moisture in the bananas, so keep an eye on it. Mine was golden brown after about 20 minutes, but on the 'touch test' (please be quick, so not to burn yourself!) it didn't spring up, so back in the oven it went for a further 10-15 minutes.

Leave to cool.


NB. Cooking time varies greatly depending on the oven used and I would hate for your efforts to be ruined because I made you complacent, so please keep checking. This nonsense about sinking cakes from opening the door is utter rubbish, just be as quick as you can. I have never had a cake sink and I check mine plenty.

Serve and enjoy with a nice cuppa!
