Cauliflower Cheese

This recipe is by far the tastiest Cauliflower Cheese I have ever had. I was in a restaurant one evening eating some that was really delicious. I set about trying to recreate the flavour at home and after several attempts this is what I came up with, happily it is even better than I remember. In my 'I don't want a lot for Christmas...' post, I have prepared a meal plan for this years Christmas dinner, along with the timings for cooking it all. This is one of the recipes I will be using, I hope you all enjoy it as much as we do. It is more interesting than plain cauliflower and makes a great side to many different meals.

You will need:
An oven dish
Blender
Saucepan
A cauliflower
1 ½ oz Butter
1 ½ oz Flour
14 fl oz Milk
1 tsp English mustard
3 ½ oz Grated mature cheddar cheese
1 Slice of white bread (wholemeal would be fine too, I just prefer white for breadcrumbs)
Salt and pepper

Method:
Preheat oven to 220ºC
Blend the slice of bread to make breadcrumbs.
Break/cut the cauliflower into florets.
Add the cauliflower to a large pan of boiling water, cover and cook for 5 minutes.
Drain and spread out the cauliflower in an ovenproof dish.
Putting the empty saucepan back on a low heat, melt the butter.
Stir in the flour to make a paste.
Continue stirring while gradually adding the milk.(If you do this very slowly, little by little and stir in thoroughly in between, you avoid any lumps and have a lovely smooth sauce).
Stir for 2 minutes.
Add the mustard and stir for 1 minute.
Turning off the heat, stir in 2/3 of the cheese until melted.
Pour the sauce over the cauliflower.
Sprinkle over the remaining cheese and about 3 tablespoons of breadcrumbs.
Season with salt and pepper.
Bake in the oven for 20-25 minutes until bubbling.
