Chicken & Chorizo Pie


Chicken Pie is great. Chicken & Chorizo Pie is fantastic! This yummy home cooked delight is just what the family need and oh my does it smell delicious!


You will need:

Pie or Pyrex dish

Frying pan


Annie's Shortcrust pastry (See 'Recipes' tab)

1 tbsp Olive oil

500g Diced chicken breast

1 Onion

110g Chorizo

150ml Single cream

600ml Chicken stock

60g Flour

100ml Sherry

Ground pepper


Method:

Make up 2 portions of 'Annie's Shortcrust Pastry' found on the 'Recipes' page.

Using roughly half the pastry line the bottom of the dish.

Preheat oven to 200ºC.

Heat the oil in a large frying pan and cook the diced chicken on a medium heat until cooked through.

Add in the onion and chorizo.

Stir until you can see the orange coloured oil from the chorizo.

Sprinkle in the flour and stir in for 1 minute.

Pour over the sherry and stir allowing the sherry to bubble for roughly two minutes.

Stir in the stock and leave to simmer on a low heat for 20 minutes to thicken.

Stir in the cream and once it is thoroughly combined, leave to simmer stirring occasionally for 10 minutes.

Add in some ground pepper to taste (the chorizo is salty so you don't really need to add more salt).

Pour into the prepared dish.

Roll out more pastry to cover the top.

Brush the edge of the pastry lining the dish with either beaten egg or milk.

Place the top layer of pastry on and either pinch around the edge of the pie or gently press using the tip of a fork.

Brush the pie with a light layer of either egg or milk (this will help the pastry turn golden brown).

Pop it in the oven, cooking for 30 minutes or until golden brown.

If you have any excess pastry and a little jam, why not make a few jam tarts for a little treat for pudding? All you need is either a round pastry cutter or a glass and a cupcake tin, greased with a little margarine or butter.

Less jam is needed than you probably think, as it bubbles and expands during cooking, so put half the amount of jam than what makes it look finished, then when its cooked it'll be perfect. Brush the edges with milk or egg and cook for 10 mins or until golden brown.


This delicious pie will happily feed a family if six.


Serve hot with a side of vegetables and enjoy.
