Lana's Perfect Roast Potatoes

Cooking the perfect roast dinner requires great roast potatoes, and I think these are the best around. This is the way my Mum and I cook ours, it is isn't healthy, but it is good old fashioned cooking. They are really delicious, I know some people who struggle to cook roasters, so I thought it's worth a share.
You will need:
A large pan
A large oven tray.
Potatoes.
Sunflower or vegetable oil.

Method:
Preheat the oven to 220ºC.
Bring to the boil a large pan of water.
Peel all of your potatoes and cut the larger ones in half.
Add the potatoes to the pan and boil for 10 mins.
While the potatoes are boiling pour a thick layer of oil into the oven tray and place it in the oven until the oil is hot.
Drain the potatoes using the pan lid and placing the lid back on, shake the potatoes a little to 'fluff' the edges.
Tip the potatoes into the oven tray (careful the oil doesn't spit and burn you!) and ensure the potatoes are thoroughly coated in oil.
Return the tray to the oven for 20 minutes.
Turn and baste the potatoes and return to the oven for another 20 minutes or until golden brown.

Serve while hot and enjoy.
