Scrumptious & Healthy Pancakes

I feel I'm not alone when I say, I often find myself craving something sweet! I am also sure when I say, I don't like my hips to pay for the privilege, that you will understand where I'm coming from . So, after trying many, many, many recipes and taste testing them all! (you're welcome) I have found this to be a nice alternative to those unhealthy, evil pancakes of the world, which go against everything we are trying to achieve, but taste delicious.


This is sure to fill you up and satisfy those pancake cravings. Full of good stuff, with no added salt or sugar, these can hit the spot, without the guilt. Now, if you decide to add even more yumminess to the batter, with blueberries or raspberries or for the anti-healthy amongst you - shredded chocolate, that's your conscience to deal with (mmmm...shredded chocolate!)


INGRIEDIENTS- For one or two people

(It depends how hungry you are, and how much you want to share!)


Half a mug of rolled oats

A pinch of baking powder

Two eggs

Two bananas

Fry light (if you really care about all that) or a teaspoon of cooking oil (for those who can't be arsed to make their finger ache pumping the f-ing fry light bottle)


METHOD

Get out your blender and stick the half a mugs worth of everyday porridge oats in there, set it off until it's a bit more flour like (there can still be bits of oats, it is not an exact science, I've just found this cooks nice and even when a little ground up)


Add in the pinch of baking powder and give it a quick buzz.


It's best to preheat your frying pan at this point with the oil on a medium heat.


Add your bananas and eggs to the mix and blend again until batter like.


Now you are ready to cook. Tip a puddle of mix into the pan (should look about scotch pancake size ) and flip once when the underside is golden brown.


When both sides are cooked to perfection, serve. I like to drizzle a smiley face of honey on (just for my kids...and me!) but it's not a necessity as the banana makes it sweet enough.


Repeat until you are out of mix and enjoy them whilst they're hot.
